Gellan Gum F Low Acyl 450g
Produced by a microbial reaction, Gellan gum has a high tolerance to heat when set, tolerates a wide Ph range of 4-10 and can withstand the effects of alcohol and enzymes, unlike other gelling agents. Low acyl Gellan forms hard, non-elastic and brittle gels as well as fluid gels. Soluble in both hot or cold bases, it has to be brought above 90c to activate. Will not hydrate in bases high in sodium or calcium salts, suitable for vegans and gluten free.
